Vegetarian Pizza

Sometimes your body craves healthy and your appetite wants lite eating.


I wanted to be deliberate in my choice to eat (more) healthy the day I made this pizza. My body didn't desire meat, but rather lots of fresh vegetables; our bodies crave what it's lacking sometimes. The goal this day for dinner was to eat something light that would fill us up. This recipe did just that.


Just because it's a necessity to eat healthy doesn't mean that I have to spend a lot of time in the kitchen prepping and cooking. This veggie pizza was simple to make. Because there is an abundance of choices for fresh produce, the ingredients can vary each time I make it.


Vegetarian Pizza


Ingredients (For a family of 6, so change accordingly)



  • 1 & 1/2 cup jarred or canned artichoke, cut into pieces

  • 2-3 cups baby spinach

  • 1 cup bell pepper, fresh red (or orange)

  • 1/2 - 3/4 cup cherry tomatoes

  • 1/2 - 3/4 cup red onion, chopped of thinly sliced

  • 1/2 - 3/4 cup Kalamata olives, pitted

  • 2 cups pizza sauce or marinara (I used marinara. Sugar-free is an option as well)

  • Ready- to-bake thin crust pizza crusts (2 packs which makes 4 pizzas). You can also make your own fresh dough.

  • 2 - 4 cups low-moisture part-skim mozzarella cheese

Directions

  1. Preheat oven according to directions on pizza crust package. If you used a recipe for homemade crust, follow the preheating instructions from that recipe. I cooked my pizza on a pizza pan. For a crispier crust, cook pizza directly on oven rack.

  2. To assemble the pizza, start by spreading desired amount of marinara on crust.

  3. Next, add the spinach, followed by the cheese.

  4. To finish assembling the pizza, add the rest of the ingredients, one by one, distributing evenly on crust.

  5. Bake according to the directions on the pizza crust package. If you used a recipe for homemade crust, follow the cooking instructions from that recipe.

  6. Garnish with parmesan and basil, if desired.
